Red Currant Smoothie Popsicles
I've collected so many pics of yummy-looking popsicles on Pinterest, I figured it's finally time to make my own. For my first try I chose a yogurt base and red currants as the main ingredient to create a cool colour and texture. Red currants are sweet but also pretty sour, so I added a banana to balance out the taste. The recipe can be used to make these home made frozen yogurt/smoothie popsicles, or just a simple breakfast smoothie. Ingredients for six popsicles: - Two handfuls of red currants - 300 ml plain yogurt - one banana - two tablespoons of honey - a food processor - six little plastic cups - popsicle sticks
Step 1: Pour the yogurt, banana, honey and one handful of red currants into the food processor and blend until smooth.
Step 2: Add half a handful of red currants and blend for about 10 seconds on a low setting. Add a couple more and mix with a spoon.
Step 3: Throw a few red currants into the plastic cups before filling them up with the mixture, and adding some more currants on top. Carefully insert the popsicle sticks and put everything in the freezer.
After about four hours the popsicles should be frozen. Let them sit for a couple of minutes and then carefully twist them out of the cups.
